When Joel Dondis and Gretchen Schmidt started planning their nuptials Joel knew one thing for certain, that his catering and event planning company, by the same name (Joel), would not get involved.
He wanted all of us to be able to have a great time as a "guest" at the wedding. Well we didn't get off the hook that easy. As it turned out we produced the rehearsal dinner of all rehearsal dinners. It was stunning! Joel was involved in every aspect of the event and of course planned the entire menu. From table centerpieces to escort cards Joel's taste and refinement was evident in every last detail. The pictures speak volumes. Feed your senses.
Caviar Pie - Wrapped in Citrus Cured Gravlax topped with Choupique Caviar and Fresh Salmon Roe, paired with Comte Audoin de Dampierre, Brut.
Mushroom Bisque - A sumptuous soup of exotic mushrooms and winter truffles served en croute, paired with King Estate Pinot Gris.
Oyster Dressing Stuffed Quail - With fennel infused mashed potatoes, crispy beet chips and a pinot reduction, paired with King Estate Pinot Gris.
Explorateur with Black Mission Figs - Poached in Sauternes, paired with St. Supery Moscato.
Manjari Chocolate Mousse and Kumquat cake - Finished with a smooth poured chocolate and pulled sugar ribbons, paired with Mumm Cuvee Napa Blanc de Noirs.
