United Paramount Network (CAC)
UPN was in New Orleans for the annual NATPE convention (National Association of Television Programming Executives) and called upon Joel to entertain their guests at a Cocktail Reception at the Contemporary Arts Center in New Orleans.
The atmosphere was one of contemporary yet futuristic surroundings and vibrant colors of light that splashed onto bars and buffets the hung from the ceilings and rafters. The food was displayed on a variety of pewter platters that dangled from stainless steal cording. Areas of the CAC were swathed in red colored light that had a very decadent ambiance. It wasn't difficult to feed your senses at this event - sight, sound, taste, touch... it was total sensory harmony.
Passed Hors D'oeuvres:
Stilton Cheese, Pear & Pistachio - Served warm on a Brioche Crouton
Spicy Lobster Spring Rolls - Vietnamese Spring Rolls filled with Fresh Lobster and wrapped in Rice Paper; served with Mango Ketchup
Seared Tenderloin Medallions - Skewered and served with Horseradish Aioli
Bruschettas To Order - Toasted Herb Focaccia Bread and rustic slices of Grilled Country Bread flavored with Olive Oil and Garlic, offered with an assortment of the following: Gorgonzola, paper-thin slices of Prosciutto, Roasted Garlic, Olive Tapenade, Wild Mushroom Duxelle, Crispy Apple-Smoked Bacon, Roasted Peppers, Chiffonade of Basil, Sundried Tomato Caponata and Marinated Bocconcini; served with Extra Virgin Olive Oil and Reduced Ages Balsamic Vinegar
Composed French Vegetable Platter - An assortment of fabulous vegetables to include: Artichoke Hearts, Sugar Snap Peas, Carrots, Zucchini, Yellow Squash and Roma Tomatoes; blanched and beautifully displayed in sections; laced and served with a Sherry-thyme Vinaigrette
European Cheeses - To include a selection of the finest European Cheeses, accompanied by exotic Fruits and Berries with Crackers and Homemade Croutons
Seared Ahi Tuna Carpaccio - Thinly-sliced and presented with Papaya Salsa, Sesame Soy Dipping Sauce, Tobiko Wasabi Caviar and crispy Wontons
Spicy Salmon And Crawfish Sushi - Our own Sushi Rolls filled with seasoned Fresh Salmon or Crawfish and Scallions, wrapped in Vinegared Rice and Nori Seaweed; beautifully displayed with Soy Sauce, Pickled Ginger and Wasabi
Sesame Noodles - Tossed with a Sweet and Spice Peanut Sauce, Fresh Cilantro, Scallions and Chopped Peanuts
A Trio Of Mediterranean Flavors - White Bean and Roasted Garlic Puree, Green Olive Tapanade and Muhamara; served with Toasted Pita Chips
Petite Pork Loin Sandwich - With shaved Red Onion, roasted Garlic Mayonnaise, and served on Homemade Brioche
